There is a great debate in Americaabout edibility of red elderberry. Blue or black varieties (S. ceruleum , S. nigrum) are OK, but red ... it is a stretch at best.

Eating of these fruits is not my own experience. I remember that my mother did a jam from fruits of Sambucus nigra and it had very original taste. On S. racemosa there is written that it edible after boiling and removing of stones. This squash is mixed with others fruits gathered in forests.
It is good to get more data on these fruits.

The data on Sambucus racemosa fruits I took from small booklet by Bruno P. Kremer. He wrote that they are not edible before cooking.

Re: There is a great debate in AmericaIt is enough to smell the red elders to know IMHO ... but ... the following is from a very respected expert, Bradford Angier:
"There is some question about the elderberries that are red...Those I have tried have been bitterly unpleasant... digestive upsets after eating them in quantity..." and he still seems to think that there ought to be a good variety of them somewhere ???
