I'd climb Longs Peak! Wait.. I did climb Longs when I was there. Easy peak, fun routes, kinda a Colorado classic.

Two Towers is on a south face(?) so you should be alright. Most of the snow that is up there is on North and West faces as of Sunday
However yesterday everything was socked in so that has probably changed. Keyhole route is technical
