On technical climbs, this also means I can easily eat at the belay.

Hmm, I'm carrying a thermos to the summit of Vinson in two weeks and have always carried on on Denali, Shasta, Aconcagua etc... Too heavy? Really ?

I guess "too heavy" depends on the reason for carrying it. I have never felt the need to carry a thermos, but I've never hiked in much colder the -20F. Vinson might convince me to carry one.

I usually bring cubed sharp cheddar cheese along with some wraps made with pbj and honey for the long winter treks. Pop tarts hold out pretty well also.
