Dolomites!

I am in the early stage of planning a climbing trip to the Dolomites for next year. Are there any Dolomites experts here?
We're looking to do easier alpine climbs (5.5, 5.6, 5.7) and hopefully some on the longer side. Are there any classics in this range?
Also any information on the best guidebooks, best season, restaurants, etc. would be appreciated...
