It seems to me that every time I go to take a photo of a butterfly she either flies away or the leaf moves too much.

Yes, I agree...behind every good capture of a butterfly are 5-8 "misses." I lucked out with this one. :)

Like I told Marc, though, what you don't see are the 8 other frames where the butterfly is half in / half out of the picture, out of focus or "on the move." I got lucky here.
