Good day! I will be traveling in November to Spain to meet my girlfriend as she completes the Santiago Camino trail and would like to get in a few non-technical peaks. Timing will be early to mid November, prefer 3K+ meters and no glacier travel/technical climbing as I will be traveling by myself and winter has challenges all of it's own.

I will be both in Santiago and Paris and would love some recommendations for peaks in the area.

Santiago and Paris are a bit far apart - but I guess you'll have to restrict yourself to the Pyrenees in that case. Not sure about 3000ers in November but I climbed these two in September 2011 and they would fit your bill. Regular hikes, but both rather long.
