Does anyone have any insight into what the South Spur route looks like mid-May as far as avalanche exposure?

From what I have read the biggest challenged posed in May (on average) is a long approach.

It really depends. I would personally feel fine about going in mid May so long as conditions on the mountain are decent. I would expect to add at least two additonal, full days for the approach/deproach that time of year. If you BC ski, I would highly recommend skiing the route.

I just heard the Sierra Nevada (of CA) received 4-ft of snow in 24 hours.

Don't know how that relates to the south side of Adams, but you might want to throw a snow shovel in the trunk.

There are certainly areas on the South Spur that could be dangerous in avy conditions, such as the area under the rim of the Crescent Glacier, or even the entire slope below Pikers. But when we attempted it in May '01, the snow was firm and solid. Avy was not an issue. YMMV

Sounds cold, I know, but that's what happens when you show up late.

Bring heavy rain gear for that long approach.

Don't be deterred by inclement weather. If you wait five minutes, it might change.

Bring lots of beer in case you have to hole up.

I've climbed Adams from the south in May a few times. As far as avy danger, it is hard to say. There are a lot of positive factors for Adams in terms of safety. The aspect of the south slope tends to promote good snow consolidation. Before you go check the avy forecast for the region and pay attention to what they say about dangers within specific aspects and elevations. My guess is that it would be alright, but if you don't have the skills to tell for yourself I would definitely look into it.

Biggest thing is the long approach. Last time I climbed it I think it took me about 6 hours or so from the first of the snow where I parked to snowshoe to the treeline above the campground. The descent made me wish I had skis...
