For non-technical 3k peaks forget about Chamonix and Grindelwald; here the choice is very limited.
Zermatt offers plenty of possibilities for at least a week and so does Arolla, Saas Almagell etc. in the neighbouring valleys.
Aosta itself also has lots of opportunities but it is more a big city apart from the trailheads -- you better go into one of the side valleys (e.g. cogne, val savaranche, breuil, val gressoney), where you can start right from your hostel or tent.
I would also like a place where one can find more young people (25-35) to join up with. Is there any of the suggested places which are better than the other for meeting other young people?
IMHO in Zermatt, Arolla, Chamonix it is quite easy to find other mountaineers.
For the villages in the Aosta region it is surely helpful to understand a little italian
