I need snow to teach

We generally go in the Mt Shasta area to teach a beginner winter camping class, but looks like its going to be a winter "dirt" camping class. We are not equipped for mountaineering, just need some snow to snowshoe in, hopefully enough to build quinzies, kitchens, and introduce avalanche lessons. We are coming from Humboldt County. I was thinking maybe Southern Oregon, but doesn't look like they have much more snow then us right now. Can't really drive too much further, because of budget and time.
Ideas anyone?

I missed a couple excellent photo ops while driving, and the fog made other
scenic locations useless.

Some decent snow up there right now. Just a couple hours north of Shasta.

The north side of Shasta has some snow.

JobMaster, looks like we're looking in the same area. Thanks! I wonder how much is left, got to make some calls today to NFS folks.

Looking at Mt Bailey area also.
