I'm driving from Sacramento tomorrow through Las Vegas. I'm thinking it might be nice to spend a night camping at Valley of Fire State Park. Considering that we 1) probably won't arrive until 7; 2) it's a weekend and 3) it's near Las Vegas, is getting a campsite pretty much a hopeless idea?

Hard to say. I was there a couple weeks back on a Saturday and the campground was packed. Fortunately, there's an s-load of BLM camping nearby. I can give you directions, if you like.
