We like R. emeticathe trick is to boil them in salted water before frying. They are still piquant - probably too much so to enjoy if it is the only kind of a mushroom - but fun in the mix. Of course if you salt-ferment them the trad Russian way, then all the mushroom with supposedly-spooky names line Russula emetica or Lactarius nauseautus are just great :)
