Russula

A mushroom in the genus Russula. I frequently see nibble marks on mushrooms of this genus. The different species within the genus are extremely hard to distinguish, but the mild-tasting ones are edible and the awful-tasting ones, while toxic, are not deadly. This one might be R. Emetica, a.k.a. "the Sickener". 3 September 2007

We like R. emetica

the trick is to boil them in salted water before frying. They are still piquant - probably too much so to enjoy if it is the only kind of a mushroom - but fun in the mix. Of course if you salt-ferment them the trad Russian way, then all the mushroom with supposedly-spooky names line Russula emetica or Lactarius nauseautus are just great :)
