Obvious question ..Does it really eat bees? They must have to
remove the stinger by performing a tricky
maneuver so they don't get stung, as some of
those bees can be aggressive.

Re: Obvious question ..On average 70% of their diet is wasps and bees. They typically watch for bees/wasps from an exposed perch like the one in the photo. If the prey lands on a plant or the ground the chase is usually called off. Prey captured on the wing is eaten in mid flight if it is small. Larger bees and wasps are usually beaten to death first against a rock or branch.
