To summarise, guesses in terms of closest to furthest:

"Volcán de Agua (3760 m)" (Guatemala)
"Volcán de Fuego (Acatenango) 3763 m" (Guatemala)
"Santa María (3772 m)" (Guatemala)
"Arenal Volcano, Costa Rica" (NW of here)
"In Mexico" (SE of here)

Additional clues to date: It's in Central America, popular with tourists when conditions allow (i.e. not big eruptions but small ones are crowd pleasers), it's not an island, and you can see water from it in a sense (i.e. you can see Volcan de Agua).
