Hi,

Have you had a look the pages of Pirineos area? I think this is the closer mountains you can trek, and you have a lot of pages and info of the area. You can contact the authors too if you a doubth.

The nearest 3000 that you can climb from Girona is Pica d'Estats
http://www.summitpost.org/mountain/rock/222830/pica-d-estats.html, the highest mountain of Cataluña (Catalonia). It's a very interesting climb, easy by the normal way, from south face (province of Lérida-Lleida). You will see pine forest, glacier lakes and surely snow or ice in december. You can follow the GR-11, marked by red and white marks to do an additional trekking.

December it's a hard season to climbs peaks over 3000m generally in Pyrenees. The ascension of a long route as Pica d'estats is very very long in snow-conditions.

Perhaps Canigou area is better for December weather conditions than choosing a 3000er

Why dont go to Andorra and follow part of the GRP, Gran Recorrido Pais, a nice route which turns around that small country. Well marked and with many huts on route:
